Grass Finished Beef on Diverse Native Grasslands | A Summertime Win

Join Elizabeth Steele and Steve Clubine, retired Missouri Department of Conservation Grassland Biologist and landowner. They tackle whether stockers can be finished on native warm season grass. They also discuss the flavor profile of beef finished on natives.

Steve had the nutrient density analyzed on a steak from an animal finished on a Diverse Native Grassland. He shares the results of this lab test in comparison to grain-fed steaks as well as steaks finished on more traditional (introduced) grass pastures. Elizabeth and Steve also discuss how some producers couple native pastures with annuals to create a chain of forages.

As a bonus, Steve shares his observations regarding how the color of cattle impacts the animal’s rate of gain over the heat of summer. The answer may surprise you. If you want to finish cattle on natives it may be more important than you think.
